What happened to Zio's Fort?

Did Demi demolish it for parts, so she could sell all the copper pipes to a junk dealer in Aiedo?

It just...disappeared. I guess it could have been constructed with magic that Zio had to continuosly cast in order to keep it there.

There's no in-game explanation to my knowledge.

Well, the basement is Nurvus. Zio had the fort built on top of Nurvus to prevent anyone from going there.

Zio sort of appeared suddenly and created this entire mess, so it isn't without reason to think that similar magic was used in the creation of Zio's Fort as it was to create the Garuberk Tower and recreate the Air Castle, as all three structures disappeared once their host died.

you can't really apply logic in this case I think.....the treasure chests spawned together with the castle....by right the weapons/armor/items you hold should magically disappear as well....what if the chest is not part of the castle? Well then if the castle disappear, then all the chests should land on the ground for you to pick......

What's interesting is that it wasn't just structures controlled by evil entities that appeared suddenly. The Anger Tower did as well.
